Now, the cheese chosen is one of the most ancient Cheeses of
Europe, The Ossau Iraty from the Valley de Ossau in the high Pyrenees. A firm,
sweet and nutty unpasteurized French sheep milk Cheese sourced by BEILLEVAIRE! Should work really good
with the medium body Brazilian red.
